The dramatic display of autumnal colours across the estate at Thyme are not the only changes that autumn has brought to our beautiful corner of the Cotswolds. Announcing our new operation as a unique boutique hotel, the unfolding story of Thyme has begun a truly exciting new chapter. Where previously guests could enjoy this stunning environment only through exclusive use of our cottages & houses, the launch of individual rooms has enabled Founder & Creative Director, Caryn Hibbert, to bring together the spaces with a thoughtfulness that informs all aspects of Thyme. The simply renovated historic buildings and our sustainable & honest food philosophies are the foundations of this luxury destination, a chic place to stay, with warm hospitality at its heart.

New guests and old friends of Thyme alike have been effusive in their praises, a faultless guest journey delivered by our welcoming team is supported by a new use of the grand spaces that we are so rich in. Reported in The Times newspaper as the 'coolest new place to stay' in the Cotswolds, this is in no small measure due to the attention to detail in our bedrooms & cottages suites, but also our newly opened guest drawing room and cocktail bar, The Baa. Sumptuous, luxurious and effortlessly chic this newly completed space has become a focal point for guests staying on the estate. Inspired by the surrounding farm and our flock of Cotswold sheep, not only is the quirkiness of the design shaped by the land surrounding Thyme but the light lunches & afternoon teas, and particularly the botanical cocktails served in the evenings are all inspired by the herb gardens, kitchen garden produce and the meadows & hedgerows of the estate at Thyme.

The simple yet imposing grandeur of the Tithe Barn at Thyme is now the morning setting for Breakfast, served at the 'chef's table', the influence of our kitchen garden & farm is nowhere more evident than on our breakfast menus, this is a very special start to our guests' day. Freshly picked seasonal produce is chosen each morning, whether a garden juice, a seasonal compote or for a heartier start - scalded padrόn peppers, chard & chickpea fritters, served with homemade chilli jam, the crispest organic bacon & the richest eggs from our hens - our menu changes daily. Our baker's delicious homemade breads & pastries sit beside granolas, yogurts, and our delicious range of preserves. Homegrown, handmade, produce driven is the essence of what is prepared at Thyme.

The Cookery School at Thyme has an established & impressive reputation and to increase its accessibility we have launched a series of shorter classes to appeal to our hotel guests, Masterclass Mornings and Short & Sweet Baking Afternoons offer two hours exploring the perfect dish for lunch or afternoon tea. These classes not only reference our own gardens but also our locally supplied produce, from cheeses to flours the Cotswolds larder on our doorstep offers unrivalled quality. A cookery school experience is a luxurious treat, perfect for the aspiring chef or the total beginner.

We have so much happening in the coming months, our 'Thyme Treats' canapé demonstrations for House & Garden's Spirit of Christmas Fair at Olympia, our New Year celebrations and of course the launch of 'Thoughts from Thyme' a monthly look at inspirational food, the cultivation of ideas and conversations of wellness, lifestyle and design.
